Chitosan is a unique fat-absorbing dietary fiber derived from crab chitin. As such, chitosan can bind to fat, making the molecule too large to be absorbed by the intestines. Therefore, if you are to take chitosan with a fatty meal, you will absorb less of the fat contained in that meal.

How much chitosan to take :
Take Chitosan as directed on the label of the supplement you are using.

Comments about chitosan:
Chitosan may also inhibit the absorbtion of your fat-soluble vitamins such as vitamin A, vitamin D, vitamin E, and vitamin K. Therefore, care should be used when taking this supplement, and chitosan should not be used with every meal.
