Class of compounds related to Vitamin A
Carotenoids are a class of natural, fat soluble pigments found in plants, phytoplankton, certain fungi and bacteria. They are responsible for the red, orange, and yellow colors seen in fruits and vegetables. However, carotenoids do more than just provide color; they are also very powerful phytonutrient antioxidants. Beta-carotene, lutein, and lycopene are some of the more well-known carotenoids, but the most powerful found to date it is astaxanthin.
